I love sours – I will happily drink anything that features lemon or lime juice prominently. I used to drink these with Rose’s lime cordial, which I thoroughly enjoyed, but the fresh lime juice version is definitely a bit sparkier.
2 oz gin
0.5 oz fresh lime juice
0.5 oz simple syrup
Shake the ingredients with ice and strain into a chilled glass. Lime-tastic.

With lavender simple syrup, this is the most divine cocktail on earth. I make buckets of it when my lavender is just getting ready to bloom, and drink gimlets all summer. Maybe I’ll have to make a batch with the dried lavender in my pantry…
Oh I love lavender too. I’ve actually been thinking about making a lilac simple syrup this year, I wonder if it would work?
It’s certainly worth a try. I love making elderflower syrup, too.
Hrm haven’t seen a gimlet made without a pre-sweetend lime juice before. I’ll have to try this variation.
It’s not dramatically different, but I do find this version smoother and less lipsmackingly tangy. I’d happily drink either though.
